For the longest time, I was on a mission to find the perfect green smoothie. I tried everything…I added frozen fruit, flaxseed, a whole slew of different vegetables. There were some that I would love and Eric would think were just so-so. I finally gave up on trying to impress him with my green smoothie skillz when I found this lovely recipe by Iowa Girl Eats. It’s simple, packed with protein, and oh so yummy. You almost forget it has some healthy stuff in it.
Green Monster Smoothie

1 Tbsp peanut butter
1 frozen banana, sliced and peeled (throw one in the freezer the night before, and make sure you slice and peel it beforehand)
2 huge handfuls of spinach
1 cup milk (I use vanilla almond milk, but you can use any kind you like here)
1/2 cup yogurt (I use vanilla greek yogurt, but again…feel free to shake things up)
Throw everything in the blender, make sure you blend it up well (nothing worse than chunks of spinach in your smoothie…) and enjoy! I may try to add stuff to it in the future, but right now I love it as is, so I’m not messing with it.
